An Ordinary Stop, an Unexpected Favorite

If you live near a Buc-ee’s—or pass one on your travels—definitely stop and try the veggie burrito. It surprised me in the best way.

I was heading home from a doctor’s appointment on Friday when I realized I hadn’t eaten all day. I was starving. I also needed gas, so I pulled into Buc-ee’s.

If you’ve never been, Buc-ee’s isn’t just a gas station—it’s practically a tourist attraction. People plan road trips around their stops. It’s… a lot.

Because hunger was winning, I decided to grab food first and wandered through the store—past the BBQ, the deli, the fresh cinnamon nuts, the bakery, the fudge—and then I spotted the veggie burrito.

It was freshly made and packed with fajita veggies, roasted corn, Mexican rice, black beans, cheese, and verde salsa (my absolute favorite). I’ll admit, I was skeptical—but desperate hunger makes you brave.

The burrito was so big I had to cut it in half and eat it with a fork. One bite in, I knew I’d found a new favorite. I finished every bite.

I never expected to say this, but Buc-ee’s may now be on my list of go-to spots for Mexican food—at least when I’m on the road.
