
Over the holidays, I bought several of those Betty Crocker cookie mixes—you know the ones in the bag where you just add butter, an egg, and a little water and suddenly you have “homemade” cookies.
Simple. Foolproof. What could go wrong? Well… apparently, quite a bit.
Of course, I never actually made them during the holidays, so these bags of cookie mix have been casually lounging in my pantry for months. This past week, I decided it was finally time.
I grabbed the gingerbread mix with visions of warm, spiced cookies dancing in my head. Ginger snaps aren’t exactly a family favorite, but I like them, so I was looking forward to an easy batch.
At the same time, I was also making shrimp fried rice for dinner.
Because clearly, one thing at a time is not my style.
Picture this:
Shrimp almost done.
Rice still chilling in the refrigerator.
Eggs needing to be scrambled.
Cookie dough halfway mixed.
It was kitchen chaos. L was scurrying around the kitchen with no clear plan other than to keep everything on track.
And somewhere in the middle of all that…
I added ½ cup of water instead of 1 tablespoon to the cookie mix.
I didn’t realize my mistake right away. I just stood there staring at the bowl thinking, this is the strangest cookie dough I have ever seen.
In hindsight, the measuring cup probably should have been my first clue…
And that’s saying something—because I used to be quite the baker. (I even won 2nd place in a Central Market cookie baking contest back in the day.)
So I double-checked the instructions.
And there it was.
My mistake.
Yikes.
At that point, I did what any modern home cook does in a crisis—I consulted my two trusted advisors: Google and ChatGPT.
The consensus?
Lean in. Add some extra spices. Bake it like a cake.
Honestly, I had nothing to lose.
So I added pumpkin pie spice, extra cinnamon, and a little shake of cloves for good measure. Ray taste-tested the batter and gave it a thumbs up, which felt like all the validation I needed.
Into the oven it went.
And you know what?
It rose like a cake.
It looked like a cake.
It just… didn’t quite behave like one.
The flavor was actually really good, but the texture was a little off—crumbly and drier than a traditional cake.
(I wish I had a picture of the cake… but my family moved faster than I did. They enjoyed it in spite of the texture.)
So no, I wouldn’t recommend turning cookie mix into cake as a go-to baking strategy.
But…
If you ever have an ingredient mishap, sometimes a quick pivot can save the day—or at least dessert.
And for the record?
The shrimp fried rice was spot on.
Sometimes the recipe doesn’t go as planned—but that doesn’t mean the story (or the dinner) is a failure.
