I’m no longer a lone nut..

First off – I have to say Thank you to the person that liked my post.  I was so surprised that someone actually read and liked it!  I really think of this blog as something for me.  I am so happy that it is out there in the universe and has the potential to touch others.

Since my last post was so dramatic I decided to go a little lighter today..(haha when you read I am writing about salad.)  I can’t say I love salad, but I have been trying to eat more salad, no cheese, just a smidge of dressing and lots of veggies.   I used to love cheese and boiled eggs on my salad, but my cholesterol is a little high, so I decided to start working on it now before it got out of hand.  Apparently, low cholesterol disappears along with your estrogen when you hit menopause.

As a result of this decision to take action, I have spent what seems like hours studying all of the bagged, pre-made salads.  I have read the ingredients, compared the dressings, looked that nutrition information, accidentally stood in other shoppers’ way while they grabbed a salad to go and started a group discussion in the aisle about the merits of pre-bagged salad.  All of this at multiple stores and with multiple brands. After all of this, I have to ask:  Who really likes Kale?  Not me.  The texture is tough and unappealing.  It is more like something I would imagine a herd of livestock enjoying – not a herd of humans.  Yes, I know people swear to love it, but do they really.  How can they???  Next question:  Why does every salad that sounds like it has potential turn out to be full of green cabbage?  I would never have thought to shred up cabbage for anything other than coleslaw or sausage & cabbage.   Now, it is the main ingredient for a salad.  Mind-boggling!  So far I haven’t bought any of these pre-bagged salads, but I think they are a fantastic idea!   I just can’t find one that is appealing.    I will continue my quest for an easy, quick salad, but in the meanwhile, I will keep eating my good ole standby of lettuce, cucumbers, tomatoes and a few extra toppings (hearts of palm, olives, garbanzo beans, carrots) to keep it interesting.
